Homemade Egg Replacer

Make this mix ahead of time, mix well, and store in an airtight container along with the directions for use.

Ingredients:

  • 1 cup potato starch
  • 3/4 cup tapioca flour/starch
  • 2 tsps baking powder (Hain brand or homemade)

Directions for use. To replace:

  • One small egg: use 1 & 1/2 tsp mix + 2 tbsp water
  • One large egg: use 1 & 1/2 tsp mix + 2 tbsp water and 1 tbsp of unsweetened applesauce
  • One egg yolk: use 1 & 1/2 tsp mix + 1 tbsp water
